Interesting, definably a nice Tx, and certainly RF. Maybe contact the place you got it from? The sticks should not be grabbing. Have you used this tx on other models?

Sounds like a cheap or defective transmitter. Is it IR or RF?

There may also be a spin on arm option, or stick scaling could be called: throttle curve or expos. Are you sure you did not loose signal, and are you flying in a city?

IDK for your FCB(flight controller board), but many have it in the settings. I'll check it out, do you have a NAZA?

Uh, where did you get the ESC from. Or what is the manufacture of the ESC and the model of the ESC.

Sounds like a setting in the firmware, or maybe a something with the board passing the raw signal through to the motors while powering down. can you give the link to the exact ESC?
