openpilot problem

I must be doing something wrong. I have run two quadcopters through openpilot with the same result, Arris 250 and MP Epic. Everything seems ok until they tilt just a little and then the throttle goes erratic. With props off and throttle low you can here the rpms go up and down when you pick it up. With props on it will do a hard flip after take off. Yep I'm pretty much a newby.
I have searched this problem with no results. Can someone enlighten me.
 
Thanks for the reply Jackson. I loaded and run librepilot .
Made a short video. I was throttling slow and steady and pow.

Thanks for the help Jackson, both are in the air now.
Software showed the flight controller board 90 degrees off on both of them.
