How do I assign switches to LEDs, Lost Buzzers, etc?

Less wires is one benefit but latency is the biggest factor in using sBus. PWM is super slow but even the difference between PPM and sBus is substantial. sBus has a total looptime processing of about 27 ms whereas PPM is up around 80 ms. Doesn't sound like much but if you do the math, 50 loops at 60 mph works out to about 5 feet! sBus also gives you much better stick resolution and handling of error.

I have mine set at 11ms, that's good I assume? It was 22ms but I was able to switch to 11ms
 
Should be fine. Signal delay is tripled in BF/CF to prevent signal frame glitching. Actual looptime for sBus is 9 ms

Does Spektrum use sbus? I got that eachine wizard x220 , had to add a Spektrum rx but had no choice but to use UART3 and that is only direct solder or use those pins
