Escs not working right.

Hey, I’m working on a 5in miniquad and have just run into an issue. I just moved to Mystery 30a escs and I am having trouble with using them with Cleanflight. As far as I know from my searching, is that I need to select the PWM option on the motor protocol option, and I’ve been recalibrating the escs nonstop. And yet, I still get the motors spinning much faster than usual and the motors sometimes ramp up in speed even after I drop the throttle down to zero on my radio. Most of the time on cleanflight 3 out of 4 motors react to the master slider,(although varying in about 20 from the actual target speed), but one sometimes doesn’t do anything. Also, I should say that I only have the 3wires small wires soldered to the fc on one of the escs if that explains anything. It’s to power the fc. PLEASE HELP!!!

You have the 3 (red, black and white) ESC wires connected to your FC on only one of the ESCs which is correct, but do you have just black and white (signal and ground) connected to the FC on the other 3? Also, have you calibrated your ESCs? Those Mystery ESCs are SimonK firmware so this needs to be done. As for your motors ramping up on the bench, that is the flight controller trying to correct for changes in aspect, mainly due to fact your quad shakes slightly when the motors spin, the sensors pick it up and then the flight controller tries to correct, it can't because you don't have props on. All perfectly normal.

So I should solder the ground wire too to the fc? And, also do I calibrate them normally in cleanflight or do I need a special firmware?

Correct. Ground and signal for each ESC should go to the corresponding pads on your flight controller (M1, M2, M3, M4) and including the red ESC wire for ESC 1. You can calibrate them all at once very easily in Cleanflight.
1. With PROPS OFF and battery disconnected, connect your quad to Cleanflight and go to the motors tab
2. Check the "I agree blah blah" box and raise the master slider all the way up to max
3. Plug the battery into your quad, you'll get a series of beeps. When they stop, your ESCs are calibrated for max throttle
4. Immediately drop your master slider all the way down to min, you'll get another series of beeps and when they are done, your ESCs are calibrated.

Careful once this last step is done, if you raise the slider again, your motors will spin up. This is why it is imperative to have the props removed

So I just tried all that and nothing fixed it. I’m at a total loss for words at this point. It’s just super stressful.

Didn't fix what? You aren't giving us much to go on. I think we should start with you posting a few pics of your wiring. One question, when you're in the receiver tab of cleanflight, is there any reaction when you move the sticks on your radio?

That's all you can do with simonk esc's is calibrate them in motors tab. Props off.
Or do it on a servo tester.
Sounds like throttle curve is high or end points are messed up.
Try resetting the board as you may have changed something without realising.
Even start a new model on the tx to rule that out aswell.
