I have a Hubsan H107P x4 Plus quad using 3.7v 520mah battery.

Question : is there any danger if I use a 3.7v 700mah on it instead? Like, will I burn the motors?

No it will give you longer flight times , Golden rule keep volts the same but have as much MAH as you like as long as the battery will fit in its bay
