Difference in Battery Brands?

Is there a difference in the different brands of batteries?

I just bought a Syma X5C-1 and of course it only comes with one battery.
I am looking on Ebay and Amazon for batteries and I start seeing lots of brand names and a huge difference in prices.
I don't know if it's just some sellers way overcharging or different battery brands are made cheaper.
With the attention of Lipos causing/catching fire. I don't want to take any chances but I also don't want to just pay the higher price needlessly.

Personally I have used turnigy, tattu, high sierra, zippy, and glacier. So far I have only lost 2 turnigys, both my fault. One due to a crash, and one by accidentally leaving my voltage monitor connected by accident. I am really liking the high sierra brand, but only time will tell.

Just make sure to never discharge too low and not to charge at a higher C rating than suggested by the manurfacture.
 
It came with a 500Mah but I believe I can use slightly larger.
I am wondering about some of the post about modifying battery wires for Syma.
Do Syma's wire them differently and if so, how can a charger know the difference of a Syma battery and one for all the other batteries?

I am assuming the 1s, 2s, 3s... are the number of cells?
I guess cell is spelled with an "S" somewhere

S comes from what is called a cell configuration.

3S1P means 3 batteries in Series (double voltage) and 1 in parallel. Turnigy sells their 5200 multistar in 3S2P and 3S1P, the difference is that one has 6 smaller cells and is a lot thicker and the other only has 3 5200mAh cells
