I am building a drone to carry a Dslr and I know the gimbal will control the camera movement but how do I control taking photos and exposure etc

I'd either set exposure to auto or if you are planning to stitch panos I'd lock the exposure at launch. Many can cannon DSLRs you can use something like a button in the 2.5mm jack on the side. You could use a switch meant for lights to take the photos, though I'd just suggest taking a video and taking the frame you want out of it so you don't need any extra controls to deal with on the ground. It would make flight and possible the end result better and easier to achieve.
