Newbie with a newbie question

Ok so I’ve been flying drones for about 3 years off and on, just learning the basics… first on a Propel Atom, then onto a propel Neutron.
I’ve decided to buy a Holly Stone HS175D.. so far it’s been awesome to fly, however the cell phone holder is too small for my phone.
I have an old IPhone 6 that I thought about using.. so my question is.. will the phone work for the drone without cell service..?
 
So the gps should still work.?
Even without cellular service..?? Meaning that the phone is currently not connected to any provider… basically I use to like an iPod
 
Yah as far as I know quads that leverage a cell phone use it for display/vid feed and potentially modifying configuration/modes but the cell connection isn't used like holtneil said the quad itself doesn't have a cellular radio (would need sim card and connection to towers itself, cell isn't device to device it goes to a tower, wifi is rf as well but at different frequency and point to point from wifi client to access point with no tower or other transmission between)
